WINE MAKING PROCESS
The winemaking process for Bianca Vigna Rive di Soligo Prosecco Extra Brut begins with a soft pressing of the grapes, followed by static decantation and fermentation at controlled temperatures. The crucial second fermentation (prise de mousse) occurs in stainless steel tanks using a cuvée close method with selected indigenous yeasts, lasting for 150 days. Following this, the wine matures in temperature-controlled stainless steel tanks, in contact with fine lees. A period of bottle refinement for approximately 3 months completes the process before release.
