WINE MAKING PROCESS
The Ernie Els Big Easy Chenin Blanc 2021 is produced from 100% Chenin Blanc grapes. The grapes are hand-harvested in the early morning. Following harvest, the wine undergoes fermentation on lees for two months, with weekly stirring (bâtonnage) to enhance texture and complexity. A small portion of the wine is briefly aged in French oak barrels, contributing subtle structure without masking the primary fruit characteristics. The aim is to create a modern, approachable expression of Chenin Blanc.
