ABOUT THIS WINE
The Penfolds Bin 2 Shiraz Mataro is a red wine blend primarily featuring Shiraz and Mataro (Mourvèdre), with potential minor contributions from other varieties. Produced by Penfolds, a winery with a history dating back to 1844, this wine draws fruit from diverse South Australian regions, including the Barossa Valley and McLaren Vale. The Bin 2 holds historical significance as one of Penfolds' earliest Bin releases, first introduced in 1960. Its blend of Shiraz and Mataro is a distinctive characteristic, with Mataro being an old-world grape that adds complexity and structure.

WINE MAKING PROCESS
The winemaking process for Penfolds Bin 2 Shiraz Mataro begins with destemming the grapes without crushing to preserve fruit integrity. Fermentation takes place at around 28°C with daily pump-overs for four weeks, followed by malolactic fermentation to enhance texture. The wine is then matured in seasoned French and American oak barrels, and possibly concrete vats, to develop complexity and integrate flavors.
