WINE MAKING PROCESS
The 2019 Bin 389 Cabernet Shiraz is a masterful multi-regional blend, showcasing Penfolds' philosophy of sourcing the best fruit from across South Australia. The vintage experienced a warm, dry growing season, with careful viticultural management, including irrigation, crucial for maintaining vine health. This resulted in concentrated fruit with excellent color and firm tannins. Following fermentation, the wine was matured for 12 months in American oak hogsheads, with 25% new oak. A distinctive aspect of Bin 389's vinification is the maturation of components in barrels previously used for Penfolds' flagship Grange, imparting a unique layer of complexity and linking it directly to its 'Baby Grange' moniker.
