WINE MAKING PROCESS
The winemaking process for this Rkatsiteli emphasizes natural and minimal intervention techniques. Fermentation is spontaneous, utilizing wild yeasts. The wine undergoes a long maceration period with dried crests, typically lasting 6-10 days. Sulfur and other anti-oxidation products are used minimally. Following fermentation, the wine is aged in new oak barrels. Vineyard management follows organic and biodynamic principles, with a focus on avoiding artificial chemicals and working with natural rhythms. Harvest timing is notably influenced by pH measurements.
