WINE MAKING PROCESS
The production of Terre Nardin's Blanc de Blancs Millesimato Extra Dry begins with the careful selection of Glera grapes, harvested in early to mid-September. The grapes undergo destemming and soft pressing in a controlled atmosphere to prevent oxidation. Primary fermentation occurs in stainless steel tanks at temperatures between 14-16°C. The wine then undergoes its second fermentation, the 'prise de mousse', in autoclaves for a minimum of 45 days using the Martinotti method. This process is managed with automated analysis and nutrient dosing. Following this, the wine is aged for 2-3 weeks before bottling.
