WINE MAKING PROCESS
Nyetimber Blanc de Blancs 2016 is produced using the traditional method, also known as Méthode Champenoise. The grapes are hand-harvested from the estate's vineyards. Primary fermentation is followed by malolactic fermentation to soften acidity. The wine then undergoes secondary fermentation in the bottle, creating its effervescence. It is aged for an extended period, a minimum of five years, on its lees, followed by an additional 18 months under cork before release. A portion of the Chardonnay may be barrel-fermented.
