WINE MAKING PROCESS
Blandy's 10 Years Old Sercial is produced from 100% Sercial grapes. The grapes are fermented off the skins in stainless steel tanks. Fermentation is arrested by fortification with grape brandy or vinic alcohol after 5-7 days, at a specific sweetness level. The wine is then aged for an average of 10 years in seasoned American oak casks using the 'Canteiro' system. This method involves transferring casks between different temperature zones within the lodge, and regular racking is carried out during the aging process.
