WINE MAKING PROCESS
The Matassa Blossom is produced using 100% Muscat Blanc à Petits Grains grapes. Key to its character is the extended skin-contact maceration, which imparts its orange hue and tannic structure. Fermentation is spontaneous, driven by native yeasts, and takes place in large wooden casks (foudres). The wine is subsequently aged in these same foudres, allowing for gentle aeration. It is bottled unfined and unfiltered, with no added sulfur, reflecting a philosophy of minimal intervention and a pure expression of the vineyard.
