WINE MAKING PROCESS
The winemaking process for Masi Bonacosta Valpolicella Classico begins with the separate harvesting of its constituent grape varietals: Molinara and Rondinella in mid-September, followed by Corvina. Fermentation takes place at 25-28°C with selected yeasts, featuring distinct skin contact periods for Corvina (sixteen days) and other grapes (ten days), totaling twenty days of fermentation. Following fermentation, the wine is aged for six months, predominantly in large Slavonian oak barrels. A portion of the Corvina component is aged in small new Allier and Slavonian oak casks. Masi Agricola is recognized for its commitment to eco-conscious viticulture and sustainability.
