ABOUT THIS WINE
Boråkra Mousserande 2021 is a white sparkling wine from Vingården Stora Boråkra, located in Blekinge, Sweden. The vineyard, established in the 1880s and now the largest in Blekinge, is managed by Staffan and Lil Ottosson. This wine is primarily made from the Solaris grape, a variety chosen for its suitability to the Swedish climate. The 2021 harvest involved leaving grapes on the vine for extended ripeness, with harvest decisions influenced by ripeness, sugar levels, and environmental factors. The wine has received recognition, including a SILVER award from the PIWI WINEAWARD INTERNATIONAL 2025.

WINE MAKING PROCESS
The production of Boråkra Mousserande 2021 begins with destemming and crushing the Solaris grapes, followed by pressing under low pressure. The resulting must is clarified in stainless steel tanks before undergoing fermentation with yeast at cool temperatures for about five weeks. Following fermentation, the wine rests on gross yeast for a period, then is racked and rests on fine yeast until early spring. This process is designed to capture the freshness and aromatic profile of the Solaris grape.
