WINE MAKING PROCESS
The production of Bosio Passato Roero Arneis begins with the manual harvest of Arneis grapes in early to late September. The grapes are then de-stemmed and pressed. Fermentation occurs in steel tanks at controlled temperatures, typically between 14-19°C, utilizing natural or selected yeasts. Malolactic fermentation is generally avoided. Following fermentation, the wine is aged on its lees in steel tanks until bottling, with a minimum of five months of bottle aging often required.
