Bourgogne Hautes-Côtes de Nuits Dames Huguettes

The Jean-Claude Boisset Bourgogne Hautes-Côtes de Nuits Dames Huguettes 2021 undergoes a winemaking process that prioritizes natural expression. Following a cold maceration at 12°C for three days, fermentation is initiated using indigenous yeasts and lasts for 14 days. Approximately 50% of the grapes are de-stemmed but not crushed, and the must is gravity-fed into tanks. The wine is then aged for 13 months on its lees in French oak barrels, with 33% of the barrels being new and toasted at low temperatures for a delicate oak integration. The wine is not fined and undergoes very light lenticular filtration. Sustainable practices are employed in the vineyard, including environmentally friendly pest management and respect for wildlife.
