WINE MAKING PROCESS
The grapes for Brasa Coèrta are hand-harvested from the Mizzole vineyard. Following harvest, they undergo a ten-day drying period in small boxes before being crushed. Fermentation is spontaneous, occurring in large oak vats with natural yeasts. Post-fermentation, the wine is aged for six months in used French oak tonneaux, during which malolactic fermentation takes place. It is then transferred to stainless steel tanks before bottling. This process is guided by a philosophy of minimal intervention.
