WINE MAKING PROCESS
The winemaking process for Brezo de Grégory Pérez begins with hand-selected grapes, 80% of which are destemmed. Alcoholic fermentation occurs in stainless steel tanks using natural wild yeasts. Following fermentation, the wine is aged briefly on its lees in stainless steel tanks and older oak barrels. Minimal filtration is employed before bottling to preserve the wine's natural character. The producer's approach emphasizes organic and holistic farming, low yields, and minimal intervention to allow the terroir to express itself.
