WINE MAKING PROCESS
Brilla! Prosecco DOC is crafted using the Martinotti-Charmat method, a process designed to preserve the fresh, fruity characteristics of the Glera grape. After a soft pressing of the grapes, the initial alcoholic fermentation takes place in stainless steel tanks at a controlled temperature of 18°C, lasting approximately 8-10 days. Following this, the wine undergoes a secondary fermentation in large, sealed pressure tanks (autoclaves) at a slightly cooler temperature of 14-15°C. This second fermentation is crucial for creating the wine's signature effervescence. Once the desired pressure and residual sugar levels are achieved, the wine is promptly chilled to halt fermentation, then stabilized, filtered, and bottled. The entire process emphasizes freshness, with no oak aging employed.
