WINE MAKING PROCESS
The Brut Réserve is a masterclass in blending, composed of equal parts Chardonnay, Pinot Noir, and Pinot Meunier. Crucially, the blend incorporates 40% of reserve wines, with an average age of 10 years, sourced from the finest crus. This exceptionally high percentage of aged reserve wines is a signature of the house. The wine undergoes slow fermentation in stainless steel tanks, followed by malolactic fermentation to enhance texture. It is aged on its lees for a minimum of 3 to 4 years in the historic Gallo-Roman chalk cellars, far exceeding the legal requirement of 15 months.
