WINE MAKING PROCESS
Hand-harvested grapes undergo immediate pneumatic pressing. Spontaneous fermentation begins in vats using only indigenous yeasts, without any added sugars, nutrients, or sulfites. Before fermentation is complete, the wine is bottled (Méthode Ancestrale) with approximately 15g/L of residual sugar, allowing fermentation to finish in the bottle and trap natural carbon dioxide. The wine is aged on its fine lees for about six months and is released without disgorgement or filtration, sealed with a crown cap.
