WINE MAKING PROCESS
Ca' Bianca Moscato d'Asti is produced using a method that emphasizes the preservation of the Moscato grape's aromatic profile. Grapes are gently pressed after a late harvest. Fermentation takes place at low temperatures in stainless steel tanks. Crucially, the fermentation is halted by cooling when the alcohol content reaches approximately 5%, a technique that retains the grape's natural residual sugar and results in a sweet, lightly sparkling wine. The wine is then typically aged briefly in stainless steel before bottling to maintain its freshness.
