WINE MAKING PROCESS
The Ca' Di Pian Barbera d'Asti Superiore DOCG is produced using grapes from organically farmed vineyards. Following hand-harvesting in early autumn, the grapes undergo fermentation and maceration in temperature-controlled rotating stainless-steel tanks for 10-15 days. The wine then completes malolactic fermentation and is aged for 10-12 months in French oak barriques, a mix of new and used barrels. An additional 3-6 months of bottle aging precedes release. La Spinetta employs meticulous viticulture, including low yields achieved through green harvesting, and a significant portion of their vineyards are farmed biodynamically.
