ABOUT THIS WINE
The Ca' di Rajo Sauvignon Blanc 2021 is an Italian white wine from the Veneto region, produced by Ca' di Rajo, a winery with a history dating back to 1931 and managed by the third generation of the Cecchetto family. The estate is situated in the Piave area, known for its historical context and proximity to Venice. This wine is cultivated using the traditional 'Bellussera' vine training system, a unique diamond-shaped pattern. While Ca' di Rajo is recognized for its Prosecco, they also produce wines from international grape varieties, demonstrating a blend of tradition and an international vision in their winemaking approach. The winery adheres to ISO 22000 certified production standards, emphasizing meticulous control over all production processes.

WINE MAKING PROCESS
The Ca' di Rajo Sauvignon Blanc 2021 is produced through a winemaking process that begins with light maceration of the grapes, followed by soft pressing. Fermentation is carried out using selected yeasts. The wine is then aged in a combination of stainless steel tanks and wooden barrels, with a portion receiving light oak aging. The grapes are harvested in September. The winery's approach integrates traditional viticultural methods, such as the 'Bellussera' vine training system, with modern winemaking techniques and a commitment to quality control, as evidenced by their ISO 22000 certification.
