WINE MAKING PROCESS
Following alcoholic fermentation in steel tanks, Ca' Morei Valtellina Superiore undergoes maturation for 12 months in oak barrels, comprising both large (30 hl) and smaller (500-liter) formats. After this period, the wine is bottled and spends an additional approximately 15 months refining before release. This process adheres to the Valtellina Superiore DOCG regulations, which mandate a minimum of 24 months of aging, with at least 12 months in wood.
