WINE MAKING PROCESS
The production of Cair Cuvée begins with hand-harvested grapes, which are then meticulously sorted on a dual-purpose selection table. Fermentation occurs in stainless steel vats. Following fermentation, the wine undergoes an aging process of 10 months in a combination of French (60%) and American (40%) oak barrels, with an average barrel age of 1 to 3 years. The Merlot component may utilize new barrels. The wine is then aged for a minimum of 6 months in bottle before its release.
