ABOUT THIS WINE
Dominio de Cair is the Ribera del Duero venture of the esteemed Luis Cañas family, renowned for their winemaking heritage in Rioja. Established in 2008, this project focuses on expressing the unique terroir of La Aguilera, a specific 'Vino de Pueblo' within Ribera del Duero. The wine is crafted from old vines, over 45 years of age, situated at high altitudes (820-870 meters) on diverse slopes and terraces. This particular site, surrounded by native scrubland, pines, and holm oaks, imparts a distinct character to the Tempranillo grapes, contributing to the wine's vibrant acidity and complex floral notes. Cair Selección 'La Aguilera' represents a genuine and sophisticated expression of its origin, blending traditional respect for the land with modern winemaking precision.

WINE MAKING PROCESS
The viticulture for Cair Selección 'La Aguilera' emphasizes meticulous care, with grapes harvested manually into 11 kg boxes to preserve their integrity. Upon arrival at the winery, the grapes undergo a rigorous sorting process on a double selection table. To enhance fruit expression, a pre-fermentative maceration is conducted in a cold chamber at 5°C. Fermentation takes place in stainless steel tanks, followed by malolactic fermentation in a combination of new French and American oak barrels, split 50/50. The wine then matures for 14 months in these same French and American oak barrels, utilizing both new and second-use oak in equal measure. After bottling, the wine undergoes a further 12 months of bottle aging before its release, ensuring optimal integration and complexity.
