WINE MAKING PROCESS
The winemaking process for Canada do Monte begins with direct pressing of the grapes, followed by a 12-hour cold decanting of the must. Fermentation is carried out using a combination of indigenous and neutral yeasts. The first pressings are vinified horizontally in stainless steel tanks, while the second pressings are fermented in used French oak barrels, accounting for 30% of the final blend. The wine then undergoes 12 months of aging, with this portion in used French oak barrels.
