She established her boutique winery to showcase a modern, elegant interpretation of traditional Sardinian varieties. The estate focuses on sustainable viticulture, utilizing the unique limestone-rich soils and cooling Mediterranean breezes of the region to craft wines of exceptional balance, freshness, and character.

WINE MAKING PROCESS
The grapes are sourced from the Mitza S'Ollastu vineyard, characterized by gravelly, pebbly soils with sand, clay, and loam. Following a meticulous manual harvest, the grapes undergo temperature-controlled fermentation in stainless steel tanks. To preserve the vibrant primary fruit characteristics and elegant floral profile of the Cannonau grape, the wine is aged primarily in stainless steel, with a small portion matured in used French oak barrels for several months to add subtle complexity and soften the tannins before bottling.
