WINE MAKING PROCESS
Carastelec Winery employs the traditional method for its sparkling wines, involving a secondary fermentation in the bottle. Grapes are hand-harvested and undergo primary fermentation in stainless steel at controlled temperatures. Following this, the wine is aged on its lees for extended periods, ranging from at least 20 months for standard bottles to 30 months for magnums, before disgorgement. This meticulous process is designed to develop complexity and a refined effervescence.
