WINE MAKING PROCESS
The winemaking process for Carlone Boca Adele begins with destemmed and pressed grapes. Fermentation takes place in steel tanks with natural indigenous yeasts, followed by a 30-day maceration period on the skins with daily pump-overs. Malolactic fermentation is conducted in steel tanks under controlled temperatures. The wine then undergoes a significant aging period of 34 months, with at least 18 months in Slavonian oak barrels. A minimum of 4 months of bottle aging precedes its market release, which occurs after three and a half years from harvest.
