WINE MAKING PROCESS
The winemaking process for Carm Reserva begins with destemming and soft crushing of the grapes, followed by a cold soak for 12 to 24 hours to enhance color and aroma extraction. Fermentation occurs in open vats at temperatures between 24-26°C for about 10 days. Malolactic fermentation takes place naturally and concludes in wood. The wine is then aged for 18 months in extra fine-grain oak barrels, comprising 70% French oak and 30% American oak.
