ABOUT THIS WINE
Carricat is a natural white wine from Alessandro Viola, produced under the Terre Siciliane IGT designation in northwestern Sicily. It is a blend of 70% Carricante and 30% Catarratto, indigenous Sicilian grape varieties. The wine is classified as an orange wine due to a short maceration period on the skins, which imparts texture and color. Alessandro Viola's winemaking philosophy emphasizes natural farming and minimal intervention in the cellar, allowing the unique terroir of his estate, situated near Alcamo with vineyards on diverse soils and altitudes, to shine through. The 2022 vintage specifically benefited from a harvest of healthy, mature grapes, contributing to the wine's freshness and minerality.

WINE MAKING PROCESS
Carricat is produced using a minimalist, natural winemaking approach. The grapes undergo spontaneous fermentation initiated by native yeasts. A key technique is a short maceration period of approximately 48 hours on the grape skins, which contributes to the wine's color and textural complexity, classifying it as an orange wine. Post-fermentation, the wine is aged for 5 to 6 months in fiberglass tanks to maintain its freshness. It is bottled unfined and unfiltered, with minimal or no added sulfites, reflecting Alessandro Viola's philosophy of non-intervention and allowing the pure expression of the grape and Sicilian terroir.
