WINE MAKING PROCESS
The Casa E. di Mirafiore Alta Langa Blanc de Noir 2020 is produced using the Metodo Classico, or traditional method. This involves a gentle pressing of the Pinot Noir grapes to obtain the free-run juice. Following primary fermentation, a second fermentation occurs directly in the bottle, which is responsible for creating the wine's effervescence. The wine then undergoes an extended aging period of at least 36 months on its lees, a process that contributes significantly to its texture and aromatic profile. Harvest for this wine takes place in late August to early September.
