WINE MAKING PROCESS
The Casa E. di Mirafiore Dolcetto d'Alba Organic 2021 is produced from 100% Dolcetto grapes grown in vineyards located on high and mid-hillside slopes. The viticulture is certified organic. Vinification involves traditional fermentation in stainless steel vats at 25°C for 8-10 days, followed by malolactic fermentation in concrete tanks. The wine is then aged for two months in large oak barrels (20-140 hl) before spending an additional six months aging in bottle.
