WINE MAKING PROCESS
Casa Gheller Treviso Prosecco Brut is produced using the Charmat method. The process begins with whole grapes undergoing soft pressing to extract the must, which is then stored in temperature-controlled tanks. Secondary fermentation occurs in pressurized vessels at 15-16°C with selected yeast cultures, a process designed to develop the wine's characteristic aromas. Fermentation is stopped by refrigeration to achieve the desired alcohol and residual sugar levels. The wine is not aged in oak. Harvest typically takes place in the second half of September. Villa Sandi employs a practice of chilling 100% of the must to preserve freshness and is involved in sustainability initiatives such as the 'Villa Sandi For Life' project.
