ABOUT THIS WINE
Casa Lupo, translating to 'Home of the Wolf,' is a dedicated project by the renowned Paladin family winery. This label pays homage to the wild, untamed history of the Valpolicella region, which was once covered in dense forests inhabited by wolves. By partnering with local heritage growers who possess generational knowledge of the land, Paladin combines traditional viticulture with modern enological expertise. The grapes are sourced from high-altitude hillside vineyards situated at 450 meters above sea level, where calcareous-fossiliferous soils and significant diurnal temperature shifts help retain freshness and structure in this highly concentrated wine.

WINE MAKING PROCESS
The winemaking process follows the traditional appassimento method. Hand-harvested in late September, the grapes are carefully selected and placed in small wooden boxes within ventilated drying lofts (fruttaio) for three to four months. This natural dehydration process concentrates sugars, acids, and tannins. In winter, the dried grapes undergo gentle pressing followed by a slow, temperature-controlled fermentation and extended maceration in stainless steel vats. The wine is then aged for 18 to 24 months in oak casks and tonneaux, followed by further refinement in the bottle to integrate its powerful structure.
