ABOUT THIS WINE
The Casa Marzoni Appassimento Bianco is an IGT Puglia white wine from Italy. It is distinguished by its use of the 'appassimento' method, where grapes are dried on the vine to concentrate their flavors, a technique more commonly associated with red wines. This process, combined with hand-sealing each bottle with traditional string ('spago'), highlights Casa Marzoni's commitment to preserving artisanal winemaking practices. The producer, Casa Marzoni, emphasizes organic farming and aims to express the essence of southern Italy in their wines. The grapes are cultivated in vineyards located in Puglia, near the Adriatic coast, benefiting from the region's climate and maritime influence.

WINE MAKING PROCESS
The Casa Marzoni Appassimento Bianco is produced using the appassimento technique, where grapes are dried on the vine for two weeks to concentrate their flavors and sugars, losing about half their weight. Grapes are hand-picked and harvested in early August. Fermentation occurs at low temperatures to maintain freshness and fruitiness. The wine is then aged for a few months in stainless steel. Each bottle is hand-sealed with traditional string. Casa Marzoni employs organic farming practices and aims to reflect the southern Italian character in their wines.
