WINE MAKING PROCESS
Casal di Serra Classico Superiore is produced from 100% Verdicchio grapes. Fermentation takes place in stainless steel tanks at controlled temperatures of 16-18 °C for 10-15 days, with some grapes undergoing pellicular maceration to enhance varietal character. The wine typically avoids malolactic fermentation. Following fermentation, it ages for about 5 months in stainless steel tanks on its lees, a process that enriches its texture and complexity. The grapes are sourced from hillside vineyards in the Classico zone of Jesi, cultivated using organic farming methods.
