WINE MAKING PROCESS
The winemaking process for Casal Mendes Rosé utilizes a unique continuous fermentation method to ensure year-round freshness. Grapes, primarily Baga and Tinta Roriz, undergo a brief cold skin maceration to extract a delicate pink hue, followed by gentle pneumatic pressing. Instead of fermenting the entire harvest at once, the unfermented grape must is preserved in cold storage. Small batches are slowly and continuously fermented throughout the year in temperature-controlled stainless steel vats at 16°C. Just prior to bottling, the wine is lightly carbonated to achieve its signature frizzante spritz.
