Casalforte Moscato is produced using the Charmat method, involving a secondary fermentation in pressurized tanks to create its sparkle. Fermentation is carefully controlled at specific temperatures and stopped early to retain residual sugar, resulting in a sweet profile. The grapes are hand-harvested in early September, often as a late harvest, with meticulous selection. The Charmat process itself takes approximately two months.
