ABOUT THIS WINE
The Casalforte Ripasso della Valpolicella DOC is a red wine from the Veneto region of Italy, produced by Collis Heritage S.p.A. Its distinctiveness lies in the 'Ripasso' method, a second fermentation on the lees of Amarone and Recioto wines, which imparts significant depth and complexity. Collis Heritage S.p.A. is a producer formed by the merger of Casa Sartori 1898 and Cantine Riondo, blending historical winemaking practices with contemporary approaches. The name 'Casalforte' is a tribute to the region's farmhouses and the resilience of its winegrowing families. The wine originates from the Valpolicella sub-region, an area with a rich viticultural heritage.

WINE MAKING PROCESS
The Casalforte Ripasso is crafted using the traditional 'Ripasso' method, a key technique involving a second fermentation on the lees of Amarone and Recioto wines. Initial fermentation typically takes place in stainless steel tanks under controlled temperatures. Following this, the wine is re-passed over the grape skins from Amarone and Recioto production, a process that enhances its depth, color, and complexity. The wine is then aged, usually for a minimum of six months, in large Slavonian oak barrels. This aging period allows for the wine to mature and integrate its components, contributing to its structure and texture.
