The winery's philosophy is centered on absolute non-intervention, allowing the grapes to express themselves without any chemical additions or technological manipulations.

WINE MAKING PROCESS
The grapes for Casanova are hand-harvested from high-altitude parcels. Fermentation occurs spontaneously with native yeasts in concrete vats, with no temperature control. The wine undergoes a short maceration to preserve fresh fruit characteristics and keep tannins soft. It is aged in concrete tanks to maintain purity of fruit and terroir expression. No sulfites are added at any stage, and the wine is bottled unfined and unfiltered, preserving its natural energy and cloudy, living character.
