WINE MAKING PROCESS
The production of Caseo Metodo Classico 410 Chardonnay 2017 begins with the soft pressing of Chardonnay grapes. The free-run juice is fermented in stainless steel tanks at a controlled temperature of 16.5°C for ten days. The resulting base wine matures for four months in stainless steel before undergoing its second fermentation in the bottle, a process known as Metodo Classico. This is followed by an extensive aging period of 36 months on the lees. Disgorgement occurs after this maturation phase. The vineyards are managed using an integrated production system for eco-sustainable practices.
