WINE MAKING PROCESS
The Castel Pujol Folklore Carbonica is produced using carbonic maceration, a technique where whole Arinarnoa grapes are fermented in a sealed tank for approximately 10 days. This is followed by pressing and completion of alcoholic fermentation in stainless steel tanks, utilizing native yeasts. The winery employs a philosophy of minimal intervention, with no filtering or clarifying, and only a small addition of SO2 at bottling. The vineyards are managed using sustainable and organic practices, including the use of sheep for weed control. The winery itself is designed with gravity-flow systems to minimize mechanical manipulation of the grapes and wine. This approach aims to capture the pure expression of the Arinarnoa grape and the unique terroir of Cerro Chapeu.
