WINE MAKING PROCESS
The winemaking process for CastelGiocondo Brunello di Montalcino begins with a meticulous selection of Sangiovese grapes in the vineyard. Fermentation takes place in temperature-controlled stainless steel tanks, with frequent pump-overs to ensure optimal extraction of color, tannins, and polyphenols. Following fermentation, the wine undergoes malolactic fermentation before being transferred to oak vessels. It is aged for a minimum of two years in Slavonian oak casks and French oak barriques, followed by an additional period of refinement in the bottle before release, adhering strictly to the DOCG regulations.
