ABOUT THIS WINE
Castello di Brolio Vin Santo is a traditional Tuscan dessert wine produced by Barone Ricasoli, an estate with a history dating back to 1141. The 2012 vintage utilizes Malvasia, Trebbiano, and Sangiovese grapes, with Malvasia comprising 90% of the blend. Produced under the Vin Santo del Chianti Classico DOC appellation, the wine's production involves drying the grapes after harvest, a process that concentrates sugars and flavors. This is followed by a lengthy aging period of nine years in small oak barrels known as 'caratelli'. The 2012 vintage was influenced by a hot summer, contributing to grape concentration.

WINE MAKING PROCESS
The production of Castello di Brolio Vin Santo begins with late harvesting of the grapes, chosen for their high sugar content. The bunches are then hung to dry partially for several months. The resulting must undergoes a slow fermentation before being transferred to 225-litre half-barriques. The wine then ages for nine years in small oak casks called 'caratelli'. Vin Santo del Chianti Classico DOC regulations mandate a minimum of 24 months in caratelli and 12 months in bottle.
