WINE MAKING PROCESS
The winemaking process for Castelo de Tavira Tinto begins with destemming the grapes, followed by a pre-fermentative maceration at low temperatures for 48 hours to enhance color and aroma extraction. Alcoholic fermentation occurs in temperature-controlled stainless steel vats for 12 days, keeping the temperature below 27°C. Following fermentation, the wine is partially aged for 10 months in French and American oak barrels, contributing to its structure and complexity. The wine is produced in the Algarve region of Portugal by Casa Santos Lima.
