WINE MAKING PROCESS
This wine is produced using estate-grown organic grapes from vineyards located at 750 meters elevation on limestone soil. The grapes are harvested at night in October to preserve acidity and sugar balance. Alcoholic fermentation occurs in stainless steel tanks at controlled temperatures of 25-27°C. Following fermentation, the wine undergoes a 6-month aging period in American oak barrels. It is then bottled after gentle filtering. The winemaking process emphasizes organic practices and respect for the natural cycle of the vines.
