WINE MAKING PROCESS
Castillo Perelada Brut is produced using the traditional method, which involves a secondary fermentation in the bottle to create its effervescence. The grapes, Macabeo, Xarel·lo, and Parellada, are first fermented in stainless steel tanks. Following this, the wine undergoes a minimum of fifteen months of aging on its lees before being disgorged. This process is designed to develop the wine's characteristic complexity and fine bubble structure.
