WINE MAKING PROCESS
Catena Alta Chardonnay is crafted using meticulous winemaking techniques. Grapes are whole-cluster pressed and fermented in 500L French oak barrels with natural yeasts at low temperatures for 12-24 days. Aggressive lees stirring (battonage) is employed to enhance texture. Thirty percent of the wine bypasses malolactic fermentation to retain crisp acidity. The wine then ages for 10-14 months in French oak barrels (a mix of new and used) on its lees. It is bottled unfined and unfiltered to preserve its natural character.
