ABOUT THIS WINE
The Catherine Marshall Sauvignon Blanc 2022 originates from the cool-climate Elgin region in the Cape South Coast of South Africa. Catherine Marshall Wines, founded by Catherine Marshall in 1997, is known for its hands-on approach and focus on producing wines of intensity and purity. The winery's philosophy emphasizes the quality derived from specific terroirs. This particular Sauvignon Blanc is distinguished by its Elgin origin, which imparts freshness, and a blend with a small percentage of cask-fermented Semillon, contributing to its mid-palate complexity.

WINE MAKING PROCESS
The winemaking process for the Catherine Marshall Sauvignon Blanc 2022 begins with hand-harvested grapes. The must is settled before fermentation, which is carried out using a commercial yeast strain at a controlled temperature of 14°C. Following fermentation, the wine is aged on gross lees for 4-6 months, with periodic stirring to enhance mid-palate richness. For the 2022 vintage, a blend incorporating 12% cask-fermented Semillon was used to broaden the wine's complexity. The final wine undergoes light fining and filtration before bottling.
