ABOUT THIS WINE
O2Y is an exciting natural micro-négociant project based in Poligny, Jura, founded by Olivier Guala, Yves Roy, and Yoshinori Kuroda. Due to severe spring frosts in the Jura, the team began sourcing organic grapes from close friends in neighboring regions. Catimini is a unique expression made from 100% Aligoté sourced from a single organic parcel in Meursault, Burgundy. By applying low-intervention winemaking to this classic Burgundy fruit, O2Y creates a playful, textured orange wine that challenges traditional regional boundaries.

WINE MAKING PROCESS
The winemaking process utilizes a 50/50 split method to achieve a perfect balance of freshness and texture. Half of the Aligoté grapes are directly pressed to preserve bright acidity and mineral tension. The other half undergoes a two-week skin maceration in neutral tanks to extract color, structure, and fine tannins. Fermentation occurs spontaneously with indigenous yeasts. The two components are blended and aged in neutral tanks to protect the clean, un-oaked profile. The wine is bottled unfined, unfiltered, and with zero added sulfur.
